When cutting, try not to heat the dough by reforming and cool it as many times as needed by putting it in the fridge.

Before baking, put the tray in the fridge for a few minutes.

9. Each piece is modeled, with the help of the food foil, in a cylinder of about 4-5 cm. thickness. Wrap both cylinders in cling film and refrigerate for 15 minutes.
